Ingredients for pasta

  • 500 gr. penne pasta
  • Plenty of water
  • 1 cube of vegetable broth 

Ingredients for the sauce

  • 2 large red tomatoes (blended)
  • 1 small onion finely chopped
  • 1 medium zucchini cut into cubes
  • 1 medium eggplant cut into cubes
  • 1 finely chopped garlic clove
  • 3 basil leaves
  • Salt- pepper
  • Olive oil


Put the water together with the vegetable broth. When it boils, add the penne pasta to the water along with a little olive oil and leave for about 15 minutes or until it is cooked according to your preferences.

In a second pot, sauté the onion and garlic together with the olive oil until they become golden brown. Then add the pumpkin and eggplant and after they are fried well, add the juice from the tomatoes and stir until the sauce thickens for about 15 minutes.

Finally, add salt, pepper and basil.

We serve the spaghetti with grated “Praskitiko” dry anari.
