- 260 gr. grated “Praskitiko” Flauna Cheese
- 260 gr. goat and sheep fresh grated “Praskitiko” halloumi cheese
- 200gr goat and sheep mature “Praskitiko” halloumi cheese cut into cubes
- 6 eggs
- 400 gr. flour “00”
- 65 g baking powder
- 160 gr of strained yogurt
- 200ml Corn oil
- 150 ml fresh milk
Put the oil, eggs, yogurt, milk in a bowl and mix. Then add the grated cheese, the grated fresh halloumi cheese, half of the mature halloumi cheese in small cubes and the spearmint. Stir again until your mixture is homogenized. Then add the flour along with the baking powder and mix.
Fill the Muffin molds with the mixture. On top of each muffin we add 4-5 pieces of the mature halloumi, to give it even more flavour.
Preheat oven to 190c and bake for about 20-25 minutes.
